Ha-saa Al-Hamam
For 4 to 6 persons
Cooking Time: approximately 1 hour 30 minutes
Ingredients:
- 6 pigeons
- 2 onions, chopped
- 2 tablespoonsful of corn oil
- half a tablespoonful of salt
- 1 teaspoonful of black peppercorns
- 6 glasses of hot water
- 6 cinnamon sticks
- 4 cardomom sticks
- 3 pieces of musk
- juice of one lemon
Preparation/Cooking Instructions
- Wash and clean the pigeons thoroughly inside and out. Dry.
- Heat the oil; fry the onion and pigeons, making sure all sides of the birds are browned.
- Add the water and boil, removing any scum from the surface as it appears.
- Add the cinnamon, musk, cadomom, salt and pepper. Simmer until the pigeons are tender.
- Place in a serving dish; pour lemon juice on top and serve.
